You are correct, an additional thermo fan will reject the thermal mass stored when stopped at the traffic lights.
If you are worried about corrosion, stick to distilled water/quality glycol mix for daily driving. Remembering that the water content is the active medium for heat transfer and that the glycol is an additive to enhance anti freeze/boil properties and prevent corrosion.
In addition, ensure your radiator cap functions correctly. It should increase the pressure in the cooling system to increase the boiling temperature of the water.
